Removing README.courier(-old)

I'm not sure if this is an objection. It's more of an observation.

Courier is still the default IMAP server recommended in the well known
Flurdy mail server guide[1] and it looks like Courier is still being
maintained. That said, I still don't know if Courier is actually used
very much.

Please don't use this comment alone as a reason to avoid removing the
Courier-related docs.
