There are two standard ways to categorize mail as spam:

- via a spam_scanner as part of @spam_scanners (usually SpamAssassin)
- via an av_scanner as part of @av_scanners and 
@virus_name_to_spam_score_maps.

Other non-standard ways involve writing code:

- some custom spam_scanner, or
- Amavis::Custom, or
- some custom Mail::SpamAssassin::Plugin
