Ok guys, finally I got the point: I had to enable SA debugging in
amavisd.conf *AND* start amavis plain debugging with:
 #amavisd-new debug

Then I got these lines (and many others), in the log:
 ...
/usr/sbin/amavisd-new[16627]: SA dbg: config: read file
 /etc/spamassassin/init.pre
/usr/sbin/amavisd-new[16627]: SA dbg: config: read file
 /etc/spamassassin/v310.pre
/usr/sbin/amavisd-new[16627]: SA dbg: config: read file
 /etc/spamassassin/v312.pre
/usr/sbin/amavisd-new[16627]: SA dbg: config: read file
 /etc/spamassassin/v320.pre
/usr/sbin/amavisd-new[16627]: SA dbg: config: read file
 /etc/spamassassin/v330.pre
 /usr/sbin/amavisd-new[16627]: SA dbg: config: using
"/var/lib/spamassassin/3.003001" for sys rules pre files
 /usr/sbin/amavisd-new[16627]: SA dbg: config: using
 "/var/lib/spamassassin/3.003001" for default rules dir
/usr/sbin/amavisd-new[16627]: SA dbg: config: read file
 /var/lib/spamassassin/3.003001/updates_spamassassin_org.cf
/usr/sbin/amavisd-new[16627]: SA dbg: config: using "/etc/spamassassin"
 for site rules dir
/usr/sbin/amavisd-new[16627]: SA dbg: config: read file
 /etc/spamassassin/25_pyzor.cf
/usr/sbin/amavisd-new[16627]: SA dbg: config: read file
 /etc/spamassassin/25_razor2.cf
/usr/sbin/amavisd-new[16627]: SA dbg: config: read file
 /etc/spamassassin/65_debian.cf
/usr/sbin/amavisd-new[16627]: SA dbg: config: read file
 /etc/spamassassin/local.cf
/usr/sbin/amavisd-new[16627]: SA dbg: config: read file
 /etc/spamassassin/sql.cf
 /usr/sbin/amavisd-new[16627]: SA dbg: config: using
 "/var/lib/amavis/.spamassassin/user_prefs" for user prefs file
/usr/sbin/amavisd-new[16627]: SA dbg: config: read file
 /var/lib/amavis/.spamassassin/user_prefs
 ...

Now remains to explain to me why SA is not reading the user preferences
stored in the MySQL db, but this could be a limitation of SA module in
following the spamd configuration files. I have 1.766 lines to read: if
 I find anything I'll tell you :)
